Turning Over a New Leaf

Happy Official First Day of Fall!!

Here on the East Coast the brisk wind has feverishly picked up blowing on the trees that are turning into the most beautiful shades of oranges and reds, and appear to be on fire as you drive by. Warm scents of pumpkin, apple and cinnamon fill the air comforting any troubled soul. For once, I’m actually excited about this season and all the great things that it brings. It might be the fact that I’m leaving for Portugal next week that has me sad I’ll miss almost a month of watching Fall come into life. Every season I create a set of goals for myself of simple things that I want to do, they’re sort of my yearly resolutions broken down by months. They don’t have to be life-changing goals, the simpler the better. It’s a rewarding feeling being able to achieve your goals in just a few short months. Even though I’ll only be back in the U.S. at the end of October, I still wanted to share my wishes for this season in hopes that it would inspire others to do the same. {It actually becomes fun, it’s like a game where you challenge yourself to accomplish everything on the list}

Hope you take advantage of this great season and remember that the goal of this is to “See new places, meet new people and experience new things. Get out there and live your life to the fullest!”

This Soba Tom Yum Noodle dish, inspired by @chriss This Soba Tom Yum Noodle dish, inspired by @chrissyteigen recipe wouldn’t be considered traditional but it does celebrate the beautiful Thai flavors I love. I’ll take all the spice & lemongrass please🍜😋!! It’s certainly become a staple of mine, one I’ve recreated several times & I highly recommend you save in your back pocket because it will leave you craving more...& more!!

I read something yesterday, that made me instantly I read something yesterday, that made me instantly stop & reflect..."Some people think that having Hope makes you naive, but in my mind, it's so much harder to choose Hope over being angry or frustrated..." As someone who considers herself quite a hopeful person, I've had this on my mind since. Let's not confuse Hope w. toxic positivity {in which negative feelings or hardships are pushed aside}, when there is Hope, we still acknowledge our worries, the drawbacks of life, the sadness but still know that there is good.

We've all been doing our best nearing a year into this pandemic; the lives lost, families broken, the uncertain long-term issues, jobs, livelihoods disrupted & most recently too many people to count, struggling after a natural disaster. My heart breaks & is w. all of you, but despite the darkness, what I've also seen during these trying times...is Hope & Love. Communities & strangers coming together to help one another however way they can, even when they too are struggling to get by. That right there, is Hope. Be gentle with yourself, be gentle w. those around you. We’re all doing the best we can🤍
