Rustic Stuffed Bread

February 19, 2014 · 8 Comments

The dreary snow, has us seeking warmth and comfort indoors. Comforting smells that take me back to our tiny town in Portugal, where cloudy brisk days meant the smell of cracking wood ovens, and freshly baked bread. Traditionally, we save enough dough to make a few stuffed loaves, either with chorizo and presunto, codfish and onions, and sautéed tuna and red peppers, which I’ve made over this snowy weekend.

This dough is so wonderfully easy, because the Portuguese like things simple and don’t have the patient to wait for bread to rise. This is a pile ingredients into a bowl, stir with your hands, fill and bake situation.IMG_3436The dough may be on the drier side but allowing it to rest while you make the filling, will help infuse the moisture back in and create a smoother dough. It will be alive and bubbly ready to bake into a crisp, doughy and salted rustic loaf of bread. IMG_3404 IMG_3405 IMG_3411 IMG_3412IMG_3419 IMG_3421IMG_3429 IMG_3430 IMG_3441 Rustic Stuffed Bread

Stuffed Bread with Sautéed Tuna & Red Peppers

Ingredients

Dough

2 3/4 cups – Bread Flour

1 cup – Whole Wheat Flour

2 1/2 teaspoons {1 small pouch} – Active Dry Yeast

3/4 teaspoon – Salt

3/4 teaspoon granulated sugar

1 1/2 to 1 3/4 cups – Warm Water

Tuna Filling

2 tablespoons – Extra Virgin Olive Oil

1 medium – Onion {chopped}

1 medium – Red Pepper

2 cloves – Garlic {minced}

1/4 cup – Tomato Paste

2 large cans {15 oz each} – Tuna {solid white, in water – use an organic brand}

Salt, Ground Pepper, Red Pepper Flakes – To taste

Handful Fresh Parsley, chopped

Recipe

To make the dough, whisk the flour, yeast, salt, and sugar in a medium bowl  Add warm water all at once, stirring with a fork until the mixture comes together. I found it easier to finish mixing the dough with my hands, which will be slightly sticky, and not smooth. Cover the dough with plastic wrap and a clean kitchen towel, allow to rise at room temperature for at least 2 hours.

Place the rack in the upper third level of the oven and pre-heat oven to 500 degrees.

To make the filling, heat a medium saute pan over medium-high heat, add the olive oil, red pepper and onions. Saute  until onions become slightly transparent {about 6 to 7 minutes}, then saute the garlic for about a minute and stir in the tomato paste. Stirring for a minute, add in the tuna, seasoning to taste. Allow tuna to cook through, and sauce to thicken slightly {about 8 to 10 minutes}.

After resting, place the dough out onto a lightly floured baking sheet. With your hands and knuckles press the dough into a rectangle almost the size of the baking sheet, making sure to not rip the dough. Place the filling in the center, then bring the outside edges of the dough and pinch together in the center, again making sure that the filling is tightly secured.

Bake until dark golden brown, and crust is baked through, rotating halfway {about 45 to 50 minutes}. Check the bottom of the loaf after 40 minutes to make sure it’s not burning. Allow to rest for a minute or two, and serve.

I shall be making this bread to remind my family of our time in Portugal – thanks for making it look so easy and giving me a push! I will probably add chorico as my kids love pao com chourico (sorry don’t know how to add accents to my letters!).

I love everything about entertaining. Flowers are my weakness, a slice of homemade pie makes my heart sing & I’m a sucker for wedding videos. Travel is a constant source of inspiration and motivation. I dream about these things, it’s true. But what I love most, is working with amazing people to create meaningful & unique celebrations…..

Woke up feeling a bit more hopeful & lighter after Woke up feeling a bit more hopeful & lighter after yesterday’s historic day. change won’t happen all at once, there is much to work on...
but for the first time in some time,
I know many are easing up those tense shoulders
& releasing a big deep breathe of relief...

it’s okay to feel good
about releasing all the energy
from the last four years,
we deserve to celebrate
letting go of that...but I do feel
this overall newfound sense of hope,
of inspiration, of drive, motivation,
one we haven’t felt in sometime,
a sigh of relief, that at least,
we’re taking the first steps
to expand & better the days ahead for all🌾🧡✨

Her 3rd birthday may not be as big as her “Some Bunny is 1” or “Peppa Pig Muddy Puddles” celebrations but her loved ones are sure to make her special day “Berry Sweet”🍓🌸
E X P A N S I O N — "the act or process of expan E X P A N S I O N — "the act or process of expanding"💫

this year I choose to expand on the
lessons last year served us...
I expand upon all my visions, dreams & intentions
I aim to expand on love, abundance, health, joy, comfort, courage, creativity, adventure, calm, authenticity, w.e big or small that makes my soul sing & thus expand upon my growth.
But I wholeheartedly hope that this year can help others expand on all the good things they want as well -- especially in global terms🤍

I haven't set resolutions in years, instead I always set intentions -- little things that become part of who I am & in turn become the steps to bring all those images I'm inspired by, into life in my own way.

I'm simplifying even more & stripping it down, choosing to always show myself, & others,
more Grace. I quite enjoy this slow but intentional path. Yes, embracing a fresh new start seems appealing, but there’s much uncertainty still to face & we have a whole year ahead of us.

There’s time to get it done so no need to rush into it...show yourself & others some grace, be a Kind human always, because anything can happen✨

Adeus 2020... It‘ll be impossible to forget you, Adeus 2020...
It‘ll be impossible to forget you, you broke us, but you also reminded us how we resilient we are. Your chapter is closed, good riddance!!

Ironically my word for 2020 was “Bliss” yet despite all the grief, the heartbreak + emotional rollercoaster I think all of us, although at times hard, did see the silver linings this past year brought. Personally, I realized early on the immense amount of Bliss that was already present in my life, perhaps more so if this year wasn’t what it was.

No, there weren’t Big Blissful moments or travels, but there was so many moments to enjoy the simple pleasures of every day. More time in the garden, a newfound excitement in the kitchen, endless cloud gazing — birdsong listening — butterfly + dragonfly catching — soothing sunsets + always stopping to smell the roses moments. Blissful moments to create whatever it was I felt like doing, moments to appreciate what truly matters in life + what of that is what always needs to be present in life. The chance to escape in the safety of nature + loved ones. The blissful opportunity to rest, to mentally wander, to learn what stillness really is.

I gave myself grace this year & a well deserved pat on the back, & I really hope you did the same!! As I sail into 2021 I remember just how important all these moments are for growth + Expansion…

Things won’t change right away but all I can wish for all of us in 2021 is abundance, health, unity, joy & Love🤍🤍
