Roasted Apricots with Yogurt

Roasted Apricot and Yogurt BreakfastBreakfast is meant to be simple, yet decadent and savored in the most loveliest of ways. The weather, although temperamental here on the East, is warming up, bringing succulent fruits onto market stands, including delightful apricots. How can one say no to roasted apricots, refreshing kiwi, creamy yogurt, and crunchy granola. Roasting the apricots brings out a sweetness you don’t get even when the fruit is at its ripest, it produces a silky sweet syrup that is heavenly. A throw-together healthy dish with complex flavors, that is meant to be indulged in the quiet of morning, or any other worthy moment during the day. Roasted Apricots and Yogurt

Ingredients {Makes one serving}

2 – Apricots {halved}

1 – Kiwi {peel the kiwi over the yogurt to get the juices}

1 tablespoon – Chia Seeds

1 cup – Plain Greek Yogurt

1/4 cup – Granola {I had this favorite of mine on hand without the dried fruit}

Dash of Cinnamon

Recipe {Adapted from Joy the Baker}

Pre-heat your broiler. Place the apricots, cut side up onto a baking sheet, roast until tops begin to bubble and brown {about 10 to 12 minutes}. Spoon the yogurt into a bowl, top with kiwi, sprinkle with chia seeds, and top with roasted apricot halves and granola. Finish with dash of cinnamon and enjoy.

I’ll take all the spice & lemongrass please🍜😋!! It’s certainly become a staple of mine, one I’ve recreated several times & I highly recommend you save in your back pocket because it will leave you craving more...& more!!

I read something yesterday, that made me instantly I read something yesterday, that made me instantly stop & reflect..."Some people think that having Hope makes you naive, but in my mind, it's so much harder to choose Hope over being angry or frustrated..." As someone who considers herself quite a hopeful person, I've had this on my mind since. Let's not confuse Hope w. toxic positivity {in which negative feelings or hardships are pushed aside}, when there is Hope, we still acknowledge our worries, the drawbacks of life, the sadness but still know that there is good.

We've all been doing our best nearing a year into this pandemic; the lives lost, families broken, the uncertain long-term issues, jobs, livelihoods disrupted & most recently too many people to count, struggling after a natural disaster. My heart breaks & is w. all of you, but despite the darkness, what I've also seen during these trying times...is Hope & Love. Communities & strangers coming together to help one another however way they can, even when they too are struggling to get by. That right there, is Hope. Be gentle with yourself, be gentle w. those around you. We’re all doing the best we can🤍
