Fall Kale Soup

October 31, 2013 · Leave a Comment

It seems I’ve been on a soup kick lately, starting with this and most recently this. The Portuguese cuisine is iconic for the Caldo Verde, or Kale Soup, traditionally made with white potatoes and chorizo. But this isn’t my Avo’s typical Kale Soup. I originally thought sweet potatoes would be a good replacement for the…

Roasted Beet Soup

October 21, 2013 · 3 Comments

I’m nearing the end of week two of the 28 day mind and body challenge and my body already feels so much better, I’ve slowly started becoming more active again, since I’ve incorporated protein back into  my regimen. I also accomplished my first 5k in almost two years yesterday at the TMC Get Moving Half Marathon and…

Spiced Butternut Squash & Apple Soup

October 16, 2013 · 8 Comments

It just isn’t Fall without a good comforting bowl of soup, especially when it’s made with one of the season’s staple vegetable, butternut squash. I haven’t been feeling my best lately and was waiting for things to calm a bit at work to start the 28 Day Mind and Body Challenge once more. I just…

I Scream for Ice Cream {Tropical Popsicles}

August 8, 2013 · Leave a Comment

Tropical Popsicles

A summer without making an ice cream each week, just doesn’t feel like my favorite season. I’ve made semi-freddo, but find it too heavy on scorching hot days when all one wants to do is wear a bathing suit and lounge by the ocean. I’ve also been experimenting in the kitchen with healthier versions of…

Roasted Red Pepper & Tomato Gazpacho

July 22, 2013 · Leave a Comment

Because it’s summer I prefer things lighter and simpler. Scorching hot days make you want to just jump in the ocean, or prop yourself in front of the air conditioner, anything other than turning on the stove.  So what does one do when you’re craving your favorite comfort food? The last thing I want to…

Lime Tart

July 18, 2013 · Leave a Comment

Over time I’ve developed an infatuation with the bitter tanginess of lemon and lime, after years of choosing rich velvety chocolate over any flavor. But there’s this sophistication and daintiness from these citrus delights. Now mix it with fresh fruit and you have a combination of flavors that explode in your mouth. Sweet, yet bitter,…

Green Bean Salad with Oats and Avocado

July 2, 2013 · Leave a Comment

When we think of 4th of July and the perfect side salad for a barbecue, we automatically think of potato, pasta, caesar, or coleslaw. Salads I usually stay clear from because they’re just too heavy for me on a hot and muggy day. I miss the crisp taste from the green beans my grandmother would bring…

Cucumber Bloody Mary

April 29, 2013 · 3 Comments

Cucumber Bloody Mary

I’ve always enjoyed a good Bloody Mary, but I didn’t truly appreciate the unique versatility of this cocktail until I had one at Hotel Congress in Arizona. They are a brunch staple, paired with simple savory foods like poached eggs or a spicy touch to sweet french toast. I’ve been wanting to infuse my own spirits since…

Saying Goodbye to 2012 and Hello to 2013!

January 7, 2013 · 8 Comments

First off, Happy New Year! It’s been quite some time since I’ve written. The holidays can be hectic but worthwhile, which is why I took complete advantage of the cheerful spirit and mini vacation, to say the least. Christmas not only had delicious, mouth-watering food, but it had smiles, love and happiness from my family…

This Soba Tom Yum Noodle dish, inspired by @chriss This Soba Tom Yum Noodle dish, inspired by @chrissyteigen recipe wouldn’t be considered traditional but it does celebrate the beautiful Thai flavors I love. I’ll take all the spice & lemongrass please🍜😋!! It’s certainly become a staple of mine, one I’ve recreated several times & I highly recommend you save in your back pocket because it will leave you craving more...& more!!

I used to post lots of recipes on the blog ‘til weddings/events/design took center stage & hoping to do so more again. Get this recipe on the blog now!
I read something yesterday, that made me instantly I read something yesterday, that made me instantly stop & reflect..."Some people think that having Hope makes you naive, but in my mind, it's so much harder to choose Hope over being angry or frustrated..." As someone who considers herself quite a hopeful person, I've had this on my mind since. Let's not confuse Hope w. toxic positivity {in which negative feelings or hardships are pushed aside}, when there is Hope, we still acknowledge our worries, the drawbacks of life, the sadness but still know that there is good.

We've all been doing our best nearing a year into this pandemic; the lives lost, families broken, the uncertain long-term issues, jobs, livelihoods disrupted & most recently too many people to count, struggling after a natural disaster. My heart breaks & is w. all of you, but despite the darkness, what I've also seen during these trying times...is Hope & Love. Communities & strangers coming together to help one another however way they can, even when they too are struggling to get by. That right there, is Hope. Be gentle with yourself, be gentle w. those around you. We’re all doing the best we can🤍
Finding it a bit hard to stay positive today…in Finding it a bit hard to stay positive today…in truth the state of our planet weighs heavily on me daily, but especially these last few days knowing that millions of people are struggling to have the basic necessities of staying warm & having running water in their own home. It’s baffling. But this is the sad reality that we have created as humans. Decades of corporations, governments & leaders choosing profits over the value & quality of human life & of every living organism necessary to make our ecosystems thrive.

No, not the happiest of posts, but it’s honesty. We have created the rise in repeated natural disasters, pandemics & rare diseases. And until we hold these people accountable & collectively make drastic changes, then we will continue to have these in more severe cases — so yes, more diseases, more crazy things happening to our environment & the places we love. We have created this change & it’s severely impacted every facet of our lives & future.

My heart is w. everyone struggling right now, because this shouldn’t be happening. Please stay safe, check on your neighbors & loved ones. Help however way you can🤍
