Cherry & Wine Granola Crisp

July 31, 2017 · Leave a Comment

What is there to say about this cherry crisp, but that it’s downright delicious! Oh, did I happen to mention the black cherries are roasted with red wine before even going into the oven, and the crunchy amazing top made from granola?! I want to say it was my favorite part about this summer dessert, but boy is the cherry filling equally amazing. But seriously, from now on, my crisps are all being made with homemade granola…Cherry & Wine Granola CrispI went with my favorite granola since I was baking a batch anyway, but imagine all the possible yummy recipes you can create. It can have pecans or coconut, or pumpkin spice for apples in the fall. Oh, that sounds real good, but let’s not jump months ahead when my beloved warm green season is still here.

Side thought, why are stores, I’m looking at you craft stores, already fully stocked with autumn pieces?? Can we take a chill, actually can we grab a slice of this crisp and just relax and be in THIS moment. Those of you saying fall is near and starting countdowns, I choose to ignore you, because there’s still plenty of summer to be enjoyed! Including plenty of flavorful summer produce to be savored, and yes more of this crisp! Cherry & Wine Granola Crisp | Dreamery EventsCherry & Wine Granola Crisp | Dreamery EventsAs I was writing this post I was kicking myself for not making sure I had a freshly baked crisp on hand to nibble on while looking through these juicy photos. I already have cherries on my farmer’s market list, so crisp this weekend it is! I’m thinking since cherries are fading away, swapping in some sweet peaches and plums for a version of this stone fruit galette would be just as mouthwatering. Cherry & Wine Granola Crisp | Dreamery EventsCherry & Wine Granola Crisp | Dreamery EventsAll praise mulled cherries. When you thinking of mulled wine we think fall, but the red wine is what totally make this classic summer cherry pie filling even more flavorful and special! It adds a sweet warmth which pairs beautifully with deep ripened black cherries. It’s easily become one of my favorites, and I already can’t wait to make it into a pie too. So if you love wine and cherries, this is definitely for you. Cherry & Wine Granola Crisp | Dreamery EventsI wish I had made this cherry crisp while I was in Portugal. With baskets filled with endless varieties of cherries and homemade wine, this would’ve been such a perfect farm to table summer dessert. Cherry & Wine Granola Crisp | Dreamery EventsCherry & Wine Granola Crisp | Dreamery EventsI love everything about pie, is simply the most perfect dessert, at least in my heart. But if I did have to be my favorite part, it would have to be the filling {no creams, I’m a fruit and nut lover}. Which is why crisps are pretty much heaven for me. Pure delicious comforting cherry wine filling! IMG_9487

Cherry & Wine Granola Crisp

Ingredients {Makes One 10″ Crisp}

1 cup – Red Wine

½ cup – Brown Sugar

2 teaspoons – Vanilla Extract

3 pounds – Fresh {or frozen} Cherries, pitted

3 tablespoons – Corn Starch

2 cups – Homemade Granola, recipe here

Recipe

Preheat oven to 425*F. Line a baking sheet with parchment paper. In a large sauté pan, bring the wine, brown sugar, and vanilla extract to a boil. Boil 4 minutes, until the sugar has dissolved. Add the cherries and simmer until the cherries soften slightly {about 5 minutes}.

In a measuring cup, whisk the cornstarch with a bit of cold water until completely smooth. Pour the cornstarch mixture into the cherries, stirring until combined. Reduce the heat and simmer cooking until the sauce has thickened slightly {about 10 to 15 minutes}. Remove from heat and allow to cool to slightly. {If making this into pie, allow filling to cool completely before adding into unbaked pie crust}

Spoon the mixture into a round casserole baking dish. Make sure to scrape in all the juices. Top the cherry wine filling with the granola in an even layer.

Place the crisp onto the prepared baking sheet and bake until granola is golden {about 30 minutes}. Reduce oven temperature to 350*F and bake until juices are bubbling and granola is a deep golden brown about 10 minutes longer}. Move to a wire rack and allow to cool slightly before slicing.

Serve crisp warm or cooled, with a big scoop of ice cream!

I love everything about entertaining. Flowers are my weakness, a slice of homemade pie makes my heart sing & I’m a sucker for wedding videos. Travel is a constant source of inspiration and motivation. I dream about these things, it’s true. But what I love most, is working with amazing people to create meaningful & unique celebrations…..

Her 3rd birthday may not be as big as her “Some Bunny is 1” or “Peppa Pig Muddy Puddles” celebrations but her loved ones are sure to make her special day “Berry Sweet”🍓🌸

this year I choose to expand on the
lessons last year served us...
I expand upon all my visions, dreams & intentions
I aim to expand on love, abundance, health, joy, comfort, courage, creativity, adventure, calm, authenticity, w.e big or small that makes my soul sing & thus expand upon my growth.
But I wholeheartedly hope that this year can help others expand on all the good things they want as well -- especially in global terms🤍

I haven't set resolutions in years, instead I always set intentions -- little things that become part of who I am & in turn become the steps to bring all those images I'm inspired by, into life in my own way.

I'm simplifying even more & stripping it down, choosing to always show myself, & others,
more Grace. I quite enjoy this slow but intentional path. Yes, embracing a fresh new start seems appealing, but there’s much uncertainty still to face & we have a whole year ahead of us.

There’s time to get it done so no need to rush into it...show yourself & others some grace, be a Kind human always, because anything can happen✨

Adeus 2020... It‘ll be impossible to forget you, Adeus 2020...
It‘ll be impossible to forget you, you broke us, but you also reminded us how we resilient we are. Your chapter is closed, good riddance!!

Ironically my word for 2020 was “Bliss” yet despite all the grief, the heartbreak + emotional rollercoaster I think all of us, although at times hard, did see the silver linings this past year brought. Personally, I realized early on the immense amount of Bliss that was already present in my life, perhaps more so if this year wasn’t what it was.

No, there weren’t Big Blissful moments or travels, but there was so many moments to enjoy the simple pleasures of every day. More time in the garden, a newfound excitement in the kitchen, endless cloud gazing — birdsong listening — butterfly + dragonfly catching — soothing sunsets + always stopping to smell the roses moments. Blissful moments to create whatever it was I felt like doing, moments to appreciate what truly matters in life + what of that is what always needs to be present in life. The chance to escape in the safety of nature + loved ones. The blissful opportunity to rest, to mentally wander, to learn what stillness really is.

I gave myself grace this year & a well deserved pat on the back, & I really hope you did the same!! As I sail into 2021 I remember just how important all these moments are for growth + Expansion…

Things won’t change right away but all I can wish for all of us in 2021 is abundance, health, unity, joy & Love🤍🤍
Want to wish you all & your loved ones a very Merr Want to wish you all & your loved ones a very Merry Christmas🤍❄️ this year certainly doesn’t feel the same, we’re not gathering w. our loved ones, in fact for many this holiday season has been even more stress inducing than other years. But it doesn’t mean it can’t be magical & wonderful & beautiful whether you’re with your kids, your parents or spending it alone. Don’t forget to make it special & honor your favorite traditions, even if just for yourself!!

May these final days of the year be calm, be love & may brighter days shine upon us all next year✨🌿
