Bastille Day, is the French national holiday, which celebrates the storming of the Bastille and marked the beginning of the French Revolution, signaling the end of the king’s power. Bastille Day is the French version of our Independence day, where fireworks and patriotic processions light up the oh so chic French streets. And of course it’s only fitting to celebrate my love of all things French by making a galette with farm fresh market peaches and strawberries, and an herbal hint of basil from the garden. 

In true French fashion, a rustic galette was folded and baked with fresh summer fruit, that created a succulent scent worthy of any French country home celebrating Bastille Day.

There is no need for processed sweeteners in this galette. With peaches so ripe and juicy, the sweetness is more enticing and satisfying that any added sugar could bring. Once baked, the peaches develop their rich yet delicate flavors even more, but then there are bitter hints from the strawberries, and a subtle earthiness from the sweet basil. I used a combination of sweet and lemon basil growing in abundance in my garden, which highlighted the sun-kissed flavors of these sweet fruits.

There may not be any celebratory fireworks lighting up the sky, but enjoy the night relaxing with a slice of this lovely galette, a chilled glass of Champagne of Pinot Gris, and gaze at the bright blue sky dim into deep oranges and purples, as the stars begin to emerge on another summer night.

Strawberry Peach and Basil Galette

{Makes one 9″ galette}


Ingredients

One recipe – Pate Brisee

1 1/2 pounds {about 3 large} – Peaches {sliced into 1/2″ pieces}

2 cups – Strawberries {sliced}

Handful – Basil and Lemon Basil

2 tablespoons – Balsamic Vinegar 

2 tablespoons – Cornstarch

Juice of half a Lemon

Pinch of Salt

Turbinado Sugar, for sprinkling

Lightly beaten egg with a splash of water, for egg wash brushing

Recipe

Pre-heat oven to 375 degrees F, and line a baking sheet with parchment paper. Roll dough to 1/4″ thickness, making sure to smooth the edges. Measure a 2″ circle from the border and create an indent. Place rolled dough on your baking sheet.

In a bowl, combine the peaches, strawberries,  basils, cornstarch, lemon juice, and salt. Place the fruit filling in indented circle, and fold over sides, overlapping and securing. Brush with egg, and sprinkle with sugar. Bake until crust is golden and juices bubble {about 60 to 75 minutes}. Cool slightly, and serve warm or at room temperature.

Mondays certainly don’t get enough love, I perso Mondays certainly don’t get enough love, I personally find it to be one of the most productive days of the workweek, but it’s a day that is also slower than the rest...

I start Mondays slower than others — light incense, open my windows wide to let the fresh air in, meditate, play beautiful music...
There are a few Mondays I truly love where I get inspired to create while others I ride the winter slow sun & let my thoughts be put into written word! 

I have a beautiful romantic styling coming this week, plus a few more travels around Serra’s outdoor beauty & even a batch of new yummy recipes. I really like when I’m inspired to create & write again🤍🌿📝
Woke up feeling a bit more hopeful & lighter after Woke up feeling a bit more hopeful & lighter after yesterday’s historic day. change won’t happen all at once, there is much to work on...
but for the first time in some time,
I know many are easing up those tense shoulders
& releasing a big deep breathe of relief...

it’s okay to feel good
about releasing all the energy
from the last four years,
we deserve to celebrate
letting go of that...but I do feel
this overall newfound sense of hope,
of inspiration, of drive, motivation,
one we haven’t felt in sometime,
a sigh of relief, that at least,
we’re taking the first steps 
to expand & better the days ahead for all🌾🧡✨

Her 3rd birthday may not be as big as her “Some Bunny is 1” or “Peppa Pig Muddy Puddles” celebrations but her loved ones are sure to make her special day “Berry Sweet”🍓🌸

this year I choose to expand on the
lessons last year served us...
I expand upon all my visions, dreams & intentions
I aim to expand on love, abundance, health, joy, comfort, courage, creativity, adventure, calm, authenticity, w.e big or small that makes my soul sing & thus expand upon my growth.
But I wholeheartedly hope that this year can help others expand on all the good things they want as well -- especially in global terms🤍

I haven't set resolutions in years, instead I always set intentions -- little things that become part of who I am & in turn become the steps to bring all those images I'm inspired by, into life in my own way.

I'm simplifying even more & stripping it down, choosing to always show myself, & others,
more Grace. I quite enjoy this slow but intentional path. Yes, embracing a fresh new start seems appealing, but there’s much uncertainty still to face & we have a whole year ahead of us.

There’s time to get it done so no need to rush into it...show yourself & others some grace, be a Kind human always, because anything can happen✨
