Pecan + Coconut Granola

April 14, 2016 · 1 Comment

Pecan + Coconut GranolaFreshly baked granola on a sunny morning, it really doesn’t get much better than that…

But can we get something clear first? Do you say “Pe-caaan”, emphasis on the A, or do you say, “PEE-can”, emphasis on the E…I feel like southern states pronounce it correctly, since it’s quite possibly their signature nut. And today happens to celebrate this nut, so happy National Pecan Day all. Yes, another food holiday…

For some reason I would have expected this food holiday to occur during the holiday months, when Pecan Pie is a plenty, but on the contrary. Originally I wanted to make a pecan butter, but when I went to gather my ingredients I realized I didn’t nearly have as many as I had thought. So since I’ve been craving some good crunchy granola, I decided to bake pecans into a spring granola.Pecan + Coconut GranolaThis granola is more like let’s use up the leftover nuts and such all in one recipe. In a large bowl with gluten free old fashioned oats, cinnamon, hemp seeds and the pecans in went the last bits of shredded coconut I had leftover from a cake, and the remenenats of walnuts, flax seed and chia seeds in my jars, before restocking them again. Yes, there’s a lot going on here, but it’s so delicious!Pecan + Coconut GranolaOh, and it’s extra crunchy, because that’s how I like it. And chunky, as in I keep those big clusters in tact, because those giant nutty crispy gems are my favorite part about eating granola. If you prefer a chewier granola then go ahead and bake your batch for less time, or  a cereal-like granola, just break up it very well once completely cooled.Pecan + Coconut GranolaAs I was making this granola, I just kept thinking of different dried fruits you could use to make this truly tropical…dried mango or pineapple, or banana chips, oh yes! Maybe crystalized ginger pieces if you dig it as much as do. The possibilities are endless, that’s why granola really is the best.Pecan + Coconut GranolaThis favorite granola recipe is the foundation for all my granola variations, and you can do the same, then swap in your favorite ingredients. But the pecans in this one, they’re the best.Pecan + Coconut GranolaPecan + Coconut GranolaOn a side note, these aren’t the original photographs I took and loved. Mounds of nuts and oats, along with my new copper measuring cups, and the most perfect morning glow, but in an instant, deleted. Damn you computer for some unexplainable reason, deciding to have a fit and stop my photos from importing, then somehow deleting them from my memory. Ah technology, but on the bright side I did still have granola, don’t know how because I eat it everyday, and managed to quickly snap these shots. Oh, course not without breaking a jar.

Oh, well. Keep calm and eat granola. Pecan + Coconut Granola

Pecan + Coconut Granola

Ingredients {Makes about 6 cups}

4 cups – Gluten Free Old Fashioned Oats {I love this brand}

1/2 cup – Raw Walnuts {coarsely chopped}

1/2 cup – Raw Pecans {coarsely chopped}

1/4 cup – Ground Flaxseed

1/4 cup – Hemp Seeds {unsalted}

1/2 cup – Shredded Coconut {unsweetened}

2 tablespoons – Chia Seeds

1 teaspoon – Sea Salt

1 tablespoon – Ground Cinnamon

3/4 to 1 cup  – Pure Organic Maple Syrup

2 to 3 tablespoons – Raw Honey

5 tablespoons – Organic Pure Coconut Oil

1/2 cup – Dried Apricots

1/2 cup – Medjool Dates {about 5 to 6}

Recipe

Pre-heat your oven to 350*F, and line a baking sheet with parchment paper. Combine the oats, walnuts, pecan, flaxseed, hemp seeds, chia seeds, shredded coconut, salt and cinnamon in a large bowl. In a small saucepan over medium heat, combine the maple syrup, coconut oil, and honey. Stir continuously until the coconut oil melts. Pour over the dry ingredients and mix until everything is well combined.

Spread evenly on your baking sheet, and bake for 30 minutes. Stir the granola and bake for another 15 to 20 minutes, until golden brown. Allow it to cool slightly and stir in your dried fruit. Allow to cool completely. Place in an airtight container at room temperature for up to 4 weeks.

I love everything about entertaining. Flowers are my weakness, a slice of homemade pie makes my heart sing & I’m a sucker for wedding videos. Travel is a constant source of inspiration and motivation. I dream about these things, it’s true. But what I love most, is working with amazing people to create meaningful & unique celebrations…..

Woke up feeling a bit more hopeful & lighter after Woke up feeling a bit more hopeful & lighter after yesterday’s historic day. change won’t happen all at once, there is much to work on...
but for the first time in some time,
I know many are easing up those tense shoulders
& releasing a big deep breathe of relief...

it’s okay to feel good
about releasing all the energy
from the last four years,
we deserve to celebrate
letting go of that...but I do feel
this overall newfound sense of hope,
of inspiration, of drive, motivation,
one we haven’t felt in sometime,
a sigh of relief, that at least,
we’re taking the first steps
to expand & better the days ahead for all🌾🧡✨
This week may have been a lot but at least it ende This week may have been a lot but at least it ended w. pretty flowers for little Adelaide! Her 3rd birthday may not be as big as her “Some Bunny is 1” or “Peppa Pig Muddy Puddles” celebrations but her loved ones are sure to make her special day “Berry Sweet”🍓🌸
E X P A N S I O N — "the act or process of expan E X P A N S I O N — "the act or process of expanding"💫

this year I choose to expand on the
lessons last year served us...
I expand upon all my visions, dreams & intentions
I aim to expand on love, abundance, health, joy, comfort, courage, creativity, adventure, calm, authenticity, w.e big or small that makes my soul sing & thus expand upon my growth.
But I wholeheartedly hope that this year can help others expand on all the good things they want as well -- especially in global terms🤍

I haven't set resolutions in years, instead I always set intentions -- little things that become part of who I am & in turn become the steps to bring all those images I'm inspired by, into life in my own way.

I'm simplifying even more & stripping it down, choosing to always show myself, & others,
more Grace. I quite enjoy this slow but intentional path. Yes, embracing a fresh new start seems appealing, but there’s much uncertainty still to face & we have a whole year ahead of us.

There’s time to get it done so no need to rush into it...show yourself & others some grace, be a Kind human always, because anything can happen✨

Adeus 2020... It‘ll be impossible to forget you, Adeus 2020...
It‘ll be impossible to forget you, you broke us, but you also reminded us how we resilient we are. Your chapter is closed, good riddance!!

Ironically my word for 2020 was “Bliss” yet despite all the grief, the heartbreak + emotional rollercoaster I think all of us, although at times hard, did see the silver linings this past year brought. Personally, I realized early on the immense amount of Bliss that was already present in my life, perhaps more so if this year wasn’t what it was.

No, there weren’t Big Blissful moments or travels, but there was so many moments to enjoy the simple pleasures of every day. More time in the garden, a newfound excitement in the kitchen, endless cloud gazing — birdsong listening — butterfly + dragonfly catching — soothing sunsets + always stopping to smell the roses moments. Blissful moments to create whatever it was I felt like doing, moments to appreciate what truly matters in life + what of that is what always needs to be present in life. The chance to escape in the safety of nature + loved ones. The blissful opportunity to rest, to mentally wander, to learn what stillness really is.

I gave myself grace this year & a well deserved pat on the back, & I really hope you did the same!! As I sail into 2021 I remember just how important all these moments are for growth + Expansion…

Things won’t change right away but all I can wish for all of us in 2021 is abundance, health, unity, joy & Love🤍🤍
